My friend Beth had a request for carrot cupcakes so here they are. It's a basic carrot cake recipe with the addition of sweetened coconut, raisins and crushed pineapple. Some people believe carrot cake should be light and spongy, I am on the site that says it should be dense and chunky.
The frosting is a cream cheese with the addition of a bit of honey and cinnamon. Garnished with fine sugar.
The recipe yields 24, but I had some extra to make 6 mini loaves. If any one would like the recipe, just drop me an email.
